This key (and never-advertised) position will see you sit at the intersection of revenue generation and guest experience. With 10 venues in the group across Melbourne and Brisbane, and the highly anticipated Côte Basque opening in winter 2026, you’ll work with some of the industry’s best minds to drive the success of every venue.
Senior Sommelier
As Senior Sommelier, you will be a leader on the floor and a custodian of guest beverage experience. This is a hands-on role working closely with Beverage Manager Xavier Vigier and the management team to deliver seamless service, develop the team, and uphold the standards that define Gimlet.
The Gimlet wine program has been awarded Australia’s Wine List of the Year Awards Hall of Fame in 2025, Australian Wine List of the Year 2024 and Best Wine List Victoria 2023-24 amongst other accolades. Gimlet was also named Restaurant Bar of the Year 2025 and awarded Bar of the Year and New Bar of the Year in 2024 for Apollo Inn.
