Chefs of all levels
Côte Basque is a place for generous food, lively drinks, and thoughtful hospitality. The menu centres on local ingredients from land and sea, with produce-led dishes that are simple in approach yet precise in execution - humble, but elevated. Expect familiar, well-loved flavour pairings of the Basque and Mediterranean coasts, cooked over charcoal with restraint and confidence. Join a new kitchen team in one of Melbourne’s most exciting new restaurants!
Front of House Roles
We’re building a team who care deeply about quality, provenance, and creating a genuinely welcoming experience for our guests. We’re currently recruiting across all levels, from emerging talent to experienced hospitality professionals. This is an opportunity to be part of a new restaurant - helping shape the culture, standards, and rhythm of a venue that somehow feels both new and as though it has always been there.
Senior Sommelier
Work with restaurant professionals who care deeply about quality, provenance, and creating a genuinely welcoming experience for our guests. Ideally, you're confident talking through key European appellations and Australian producers, are conversant with classic cocktails, and have a curiosity to learn and grown in your understanding of the world of wine. Formal qualifications are to advantage; the ability to swiftly distill that knowledge to the charming essentials is a must.
Events & Reservations Coordinator
This unique position will see you working on reservations, event sales and coordination, administration and supporting venue day-to-day operations. Most importantly, you'll ensure exceptional guest experiences. Your home base will be at our brand new Côte Basque office located in the Melbourne CBD, however you'll gain experience and have opportunities to contribute across the group.
Bar Manager
This is an opportunity for a professional with strong leadership and financial management skills, and broad spirits and cocktail knowledge to lead a dynamic bar program in our newly established restaurant and bar.
The Bar Manager is responsible for delivering a profitable bar program with a focus on quality and interest. Working collaboratively alongside the Beverage Manager, Senior Bar Manager and other key beverage leaders, you will be responsible for the execution of industry-leading service, meeting financial targets, inventory management, training and succession, and business development. You will report to the Beverage Manager & Venue Manager, with mentoring and support from the wider Trader House management team and Group Beverage Director, Leanne Altmann.
